Instructions

  1. Melt 1 tablespoon of unsalted butter with 1 tablespoon of olive oil in a 12-inch sage-green ceramic nonstick skillet over medium-high heat until the butter foams and stops sputtering.
  2. Add the shelf-stable potato gnocchi directly from the package into the skillet in a single layer without overcrowding.
  3. Sear the gnocchi without stirring for 3 to 4 minutes until the undersides develop a crisp, golden-brown crust.
  4. Flip the gnocchi using a spatula and cook for another 2 to 3 minutes until light golden on both sides and slightly puffed, then transfer them to a plate and set aside.
  5. Reduce skillet heat to medium, add the finely chopped yellow onion to the remaining oil and butter in the skillet, and sauté for 3 minutes until softened and translucent.
  6. Stir in the minced garlic and tomato paste, cooking for 1 to 2 minutes while constantly stirring until the paste turns a deep brick-red color and smells fragrant.
  7. Pour in the crushed tomatoes, Italian seasoning, red pepper flakes, salt, and black pepper, stirring well to combine and simmering for 3 to 4 minutes until the sauce thickens and bubbles gently.
  8. Reduce heat to low, stir in the heavy cream and drained cannellini beans, mixing for 1 to 2 minutes until the sauce turns a smooth, blush orange color and warms through.
  9. Add the fresh baby spinach to the skillet in two batches, gently folding for 1 to 2 minutes until the leaves turn bright green and completely wilt into the sauce.
  10. Return the seared gnocchi to the skillet, folding gently to coat every piece in creamy sauce, sprinkle with grated Parmesan cheese and chopped fresh basil, and serve immediately.
