Instructions

  1. Place the shredded cooked chicken, drained diced green chiles, and taco seasoning mix into a medium mixing bowl until sitting evenly together at the bottom.
  2. Toss the chicken mixture thoroughly until the red-orange taco seasoning coats every piece of chicken uniformly.
  3. Preheat a heavy 12-inch black cast-iron skillet or dry griddle over medium heat until radiant warmth radiates from the surface.
  4. Place one 10-inch flour tortilla flat on a warm oak cutting board until smooth.
  5. Sprinkle 1/4 cup of shredded Mexican cheese blend over one half of the tortilla until a light cheese layer forms, leaving a 1/2-inch border.
  6. Layer 3/4 cup of the seasoned chicken mixture over the cheese until evenly covering the half-moon area.
  7. Sprinkle another 1/4 cup of shredded Mexican cheese blend over the chicken layer until completely covered in cheese.
  8. Fold the un-topped half of the tortilla over the filling until a compact half-moon shape is created.
  9. Press down gently on the folded quesadilla with your palm until the filling layers are flattened and packed together.
  10. Brush the top exterior of the folded tortilla with melted butter using a pastry brush until lightly glistening.
  11. Transfer the assembled quesadilla onto the hot heavy 12-inch black cast-iron skillet or dry griddle until resting flat on the hot surface.
  12. Cook the quesadilla undisturbed for 3 to 4 minutes until the bottom tortilla turns crisp and spotty golden-brown.
  13. Slide a wide spatula underneath the quesadilla and flip it over until the un-toasted side rests against the hot pan.
  14. Cook the second side for 3 minutes until toasted golden-brown and the inner cheese is completely melted and oozing along the edges.
  15. Transfer the cooked golden quesadilla onto a warm oak cutting board until resting.
  16. Repeat steps 4 through 14 with the remaining 3 tortillas and filling until all 4 quesadillas are golden-brown and melted.
  17. Slice each cooked quesadilla into 3 triangular wedges using a sharp pizza cutter until clean cuts are formed.
  18. Arrange the crispy quesadilla wedges on cream stoneware plates alongside salsa, sour cream, lime wedges, and cilantro until ready to serve.

Chef's Tips

  1. The Double-Cheese Sandwich Technique: Always place cheese both underneath and on top of the chicken filling before folding. As the cheese melts, it binds the tortilla halves to the meat, preventing the filling from spilling out when flipped.
  2. Dry Skillet vs. Butter: Cooking quesadillas on a dry or very lightly oiled heavy skillet yields an ultra-crispy, cracker-like toast without making the tortilla greasy or soggy.
  3. Air Fryer Reheating Magic: Reheat leftover quesadilla wedges in an air fryer at 370°F for 3 to 4 minutes. The air fryer restores the exterior's satisfying crunch while thoroughly re-melting the cheese inside.
