Instructions

  1. Prep steak: Freeze shaved ribeye steak for 15 minutes before prep for easier thin slicing, then cut steak across the grain into bite-sized ribbons.
  2. Heat cast-iron skillet: Place a heavy cast-iron skillet over high heat for 3 minutes until very hot and lightly smoking.
  3. Melt veggie butter: Swirl 1 tablespoon unsalted butter into the cast-iron skillet until sizzling and melted across the bottom.
  4. Sauté peppers and onions: Add sliced yellow onions, green bell peppers, and mushrooms to the cast-iron skillet and sauté for 6 minutes, stirring frequently, until vegetables are tender, glossy, and golden brown at the edges.
  5. Set veggies aside: Transfer caramelized peppers and onions from the cast-iron skillet to a cream stoneware plate and keep warm.
  6. Sear ribeye ribbons: Add 1 tablespoon olive oil to the hot cast-iron skillet, drop in shaved ribeye ribbons in an even layer, and sear without moving for 2 minutes until a deep brown crust forms on the bottom.
  7. Season and chop steak: Sprinkle garlic powder, salt, black pepper, and Worcestershire sauce over the steak, then toss and chop beef into small tender bits using a metal spatula for 2 minutes until no pink remains.
  8. Combine meat and veggies: Return caramelized peppers and onions to the cast-iron skillet with the chopped steak and toss together thoroughly for 60 seconds until steaming hot.
  9. Melt provolone cheese: Separate steak mixture into four distinct roll-shaped piles in the cast-iron skillet, lay 1 ½ slices of provolone over each pile, turn off heat, and cover skillet for 90 seconds until cheese is fully melted, gooey, and bubbling over meat.
  10. Toast hoagie rolls: Spread softened butter inside 4 split hoagie rolls and toast face-down in a separate dry skillet over medium heat for 2 minutes until light golden brown.
  11. Scoop into rolls: Use a wide metal spatula to scoop each cheesy steak portion directly into a toasted hoagie roll and serve hot immediately.

Chef's Tips

  1. Freeze beef before slicing: Place ribeye in the freezer for 15-20 minutes before prep; firming up the fat makes it easy to slice paper-thin ribbons with a sharp knife.
  2. Ask your butcher: Many grocery meat counters sell pre-shaved ribeye or sirloin (often labeled "cheesesteak meat"), saving you 10 minutes of prep time!
  3. Make-ahead & storage: Keep meat and veggies stored in an airtight container for up to 3 days. Toast rolls fresh right before serving and melt cheese over warm reheated meat in a hot skillet.
