Instructions

  1. Start jasmine rice: Combine quick-cooking jasmine rice, water, and salt in a small saucepan over high heat, bring to a boil, then cover tightly, reduce heat to low, and cook for 10 minutes until fluffy.
  2. Make cucumber pickle: In a cream stoneware bowl, toss sliced English cucumbers with rice vinegar, sesame oil, sugar, salt, and red pepper flakes, then set aside for 10 minutes to quick-pickle and crisp.
  3. Whisk Korean sauce: In a small glass measuring cup, whisk low-sodium soy sauce, dark brown sugar, gochujang chili paste, and black pepper until sugar is completely dissolved into a shiny mahogany marinade.
  4. Brown ground beef: Place a deep nonstick skillet over medium-high heat, add lean ground beef, and break into small crumbles with a wooden spoon for 6 minutes until browned through with no pink remaining.
  5. Drain excess oil: Tilt the deep nonstick skillet slightly to drain away any extra liquid fat from beef, leaving beef in skillet.
  6. Sizzle aromatics: Add minced garlic, grated ginger, and toasted sesame oil to ground beef in the deep nonstick skillet and cook for 60 seconds until fragrant and sizzling.
  7. Glaze beef with sauce: Pour whisked soy-gochujang sauce over browned ground beef in the deep nonstick skillet and simmer over medium heat for 3 minutes, stirring constantly, until sauce reduces into a sticky, glossy glaze that coats every meat crumble.
  8. Assemble rice bowls: Divide warm fluffy jasmine rice evenly into four wide cream stoneware bowls.
  9. Top with beef and veggies: Spoon sticky Korean ground beef over half of each rice bowl, then arrange crisp cucumber pickle and matchstick carrots neatly alongside the beef.
  10. Garnish and serve: Sprinkle each bowl generously with sliced green onions and toasted white sesame seeds, and serve immediately.

Chef's Tips

  1. Adjust gochujang heat: Gochujang adds a sweet, fermented chili depth rather than fiery heat. If serving kids, start with 1 teaspoon; spice lovers can add 2 tablespoons.
  2. Keep cucumbers crunchy: Slice cucumbers thin but not paper-thin, and drain any excess liquid before serving so your rice bowls stay crisp and fresh.
  3. Make-ahead & storage: Cooked Korean ground beef and rice keep wonderfully in meal prep containers for up to 4 days. Pack cucumber pickles separately and add fresh before eating!
