Instructions

  1. Boil egg water: Fill a small pot with 4 cups of water and bring to a rapid rolling boil over high heat.
  2. Prepare ice bath: Fill a medium cream stoneware bowl with cold water and ice cubes, setting it next to stove.
  3. Boil jammy eggs: Gently lower 4 cold eggs into boiling water using a slotted spoon and boil for exactly 6 minutes and 30 seconds until whites set and yolks stay soft.
  4. Chill eggs immediately: Transfer boiled eggs with slotted spoon directly into ice bath and submerge for 3 minutes until cooled completely.
  5. Peel soft-boiled eggs: Gently tap eggshells on warm oak cutting board, peel shells under cool running water, and set eggs aside.
  6. Simmer broth aromatics: In the small pot, combine chicken broth, 1 cup water, minced garlic, and grated ginger over medium-high heat until simmering gently.
  7. Dissolve miso paste: Ladle ½ cup warm broth into a small bowl, whisk in white miso paste until smooth, then pour back into small pot with soy sauce and sesame oil.
  8. Sear chicken and corn: Heat 1 tablespoon vegetable oil in a small skillet over medium heat, add sliced chicken and sweet corn, and cook for 2 minutes until hot and golden on edges.
  9. Cook ramen noodles: Drop 4 blocks of instant ramen noodles into simmering broth in small pot and cook for 3 minutes until strands separate and turn pliable.
  10. Wilt baby spinach: Stir fresh baby spinach into small pot with noodles and broth for 30 seconds until leaves turn bright green and wilted.
  11. Divide ramen noodles: Use tongs to lift cooked ramen noodles out of small pot and divide evenly among four deep ceramic ramen bowls.
  12. Ladle hot broth: Ladle rich garlic-sesame broth from small pot over noodles in ceramic ramen bowls until submerged and steaming.
  13. Halve soft-boiled eggs: Slice each peeled soft-boiled egg in half lengthwise on warm oak cutting board to reveal a glistening jammy yolk.
  14. Assemble toppings and serve: Top each ceramic ramen bowl with seared chicken, sweet corn, two egg halves, sliced green onions, sesame seeds, and a sheet of nori seaweed.

Chef's Tips

  1. Time eggs with precision: Start timing the moment cold eggs hit boiling water, and transfer immediately to an ice bath for perfectly jammy 6.5-minute yolks.
  2. Miso whisk technique: Always dissolve miso paste in a small cup of warm broth before adding to the pot to ensure a smooth, clump-free broth.
  3. Make-ahead & storage: Keep broth, cooked chicken, and peeled soft-boiled eggs in separate containers in the fridge for up to 3 days. Cook fresh noodles and combine just before serving.
