Crispy on the outside, soft on the inside, and loaded with rich homemade garlic-herb sauce and melty mozzarella, these French bread pizzas deliver pizzeria quality in just 25 minutes.
Ingredients
For the Crust & Garlic Rub:
- 1 large bakery-fresh French baguette (12 to 14 inches long), cut in half crosswise, then split lengthwise into 4 equal quarters
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, peeled and cut in half
For the Quick Pizza Sauce:
- 1 cup crushed canned San Marzano tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon freshly cracked black pepper
For the Toppings:
- 2 cups (8 ounces) low-moisture, whole-milk shredded mozzarella cheese
- 1/2 cup (2 ounces) sliced mini pepperoni (or diced bell peppers and sliced black olives for a vegetarian option)
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons fresh basil leaves, sliced into thin ribbons (chiffonade)
Equipment
- Heavy commercial half-sheet baking pan
- Parchment paper
- Small mixing bowl
- Measuring spoons and cups
- Pastry brush
- Chef's knife and cutting board
- Cheese grater
Instructions
- Preheat your oven to 425°F (220°C) and line a heavy commercial half-sheet baking pan with a sheet of parchment paper.
- Slice the French baguette horizontally with a serrated knife so that you have four sturdy half-bread bases of equal thickness.
- Lightly brush the cut sides of each baguette half with 2 tablespoons of extra-virgin olive oil until evenly coated and glistening.
- Rub the cut garlic clove vigorously across the oiled surface of each baguette piece until the garlic releases its aromatic oils into the bread.
- Place the oiled bread quarters cut-side up on the prepared baking pan and bake for 5 minutes until the bread surface is lightly toasted and pale golden.
- Prepare the quick pizza sauce while the bread pre-toasts by whisking together the crushed tomatoes, tomato paste, 1 tablespoon olive oil, dried oregano, dried basil, garlic powder, salt, and black pepper in a small bowl until smooth and glossy.
- Remove the pre-toasted bread from the oven and spread 1/4 cup of the sauce evenly over each slice, leaving a tiny 1/4-inch border around the edges.
- Distribute 1/2 cup of shredded mozzarella cheese across each sauced baguette quarter until the tomato layer is completely blanketed.
- Layer the sliced mini pepperoni across the top of the cheese so each pizza slice has a generous, even distribution of toppings.
- Sprinkle the freshly grated Parmesan cheese evenly over the pepperoni and mozzarella layers.
- Return the baking pan to the middle oven rack and bake at 425°F for 10 minutes until the cheese is completely melted, bubbling furiously, and starting to brown in spots while the bottom edge of the baguette is deep golden brown and crispy.
- Remove the pizzas from the oven, garnish with fresh basil ribbons, let rest for 2 minutes on the baking sheet to set the cheese, and serve warm.

Chef's Tips
- Preventing Soggy Bread: Pre-toasting the baguette halves with a light brush of olive oil creates a crucial moisture barrier. If you add tomato sauce to raw, soft bread, the liquid seeps into the crumb and makes the bottom soggy instead of shatteringly crisp.
- Cheese Selection: Always select low-moisture whole-milk mozzarella and grate it yourself from a block whenever possible. Pre-shredded packaged cheese contains cellulose coatings that prevent the cheese from melting into that luscious, stretchy blanket we want for pizza.
- Make-Ahead & Storage: You can prepare the quick sauce up to 4 days in advance and keep it chilled in an airtight container. Leftover cooked pizzas can be wrapped in foil and refrigerated for up to 3 days; re-crisp them in a 375°F oven for 8 to 10 minutes (avoid the microwave, which turns the crust chewy).
