Ingredients
For the Seasoned Chicken:
- 1.25 pounds chicken breast, cut into 1/2-inch strips
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly cracked black pepper
For the Wraps & Sauces:
- 4 large flour tortillas (10-inch diameter)
- 1 cup (4 ounces) sharp cheddar cheese, shredded
- 2 cups romaine lettuce, finely shredded
- 1 large Roma tomato, seeded and finely diced
- 1/4 cup creamy ranch dressing
- 2 tablespoons Buffalo hot sauce
- 1.5 tablespoons neutral cooking oil (avocado oil or canola oil, for crisping)
Equipment
- Heavy 12-inch cast-iron skillet
- Small mixing bowl
- Medium mixing bowl
- Tongs
- Spatula
- Chef's knife and cutting board
- Measuring spoons and cups
Instructions
- In a medium mixing bowl, toss the chicken breast strips with 1 tablespoon olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
- Heat a heavy 12-inch cast-iron skillet over medium-high heat until hot, then add the seasoned chicken strips in a single layer.
- Cook the chicken strips for 6 to 8 minutes, flipping halfway through with tongs, until golden brown on the outside and cooked through to an internal temperature of 165°F.
- Transfer the cooked chicken to a plate and cover loosely with foil to keep warm while assembling wraps.
- In a small ramekin, whisk together the ranch dressing and Buffalo hot sauce until smooth and pale orange.
- Lay the 4 large flour tortillas flat on a clean surface or warm oak cutting board.
- Sprinkle 1/4 cup of shredded cheddar cheese across the center third of each tortilla, leaving 2 inches open on the top and bottom ends.
- Divide the cooked chicken strips evenly over the cheese layer on each tortilla.
- Drizzle 1.5 tablespoons of the ranch-buffalo sauce mixture directly over the chicken.
- Top with shredded romaine lettuce and diced Roma tomatoes.
- Fold the top and bottom sides of each tortilla inward over the filling, then roll tightly from the left edge to the right edge to form a snug, sealed wrap.
- Wipe the cast-iron skillet clean with a paper towel, add 1.5 tablespoons of neutral cooking oil, and place over medium heat until hot.
- Place the 4 wraps seam-side down in the hot skillet and cook for 2 to 3 minutes until the bottom seam is crisp, sealed, and golden brown.
- Flip the wraps carefully with a spatula and cook the top side for another 2 minutes until evenly browned, crispy, and the cheese inside has melted.
- Remove the wraps from the skillet, slice diagonally in half with a sharp knife, and serve warm.

Chef's Tips
- Seam-Side Down First: Placing the wraps seam-side down in the hot skillet first is essential. The heat seals the tortilla flap instantly so the wrap stays tightly rolled when flipped and eaten.
- Drying the Greens: Ensure your shredded lettuce and diced tomatoes are thoroughly patted dry with paper towels before assembling. Excess moisture causes steam inside the wrap, making the tortilla soggy instead of crisp.
- Heat Control: If your chicken or buffalo sauce is too spicy for kids, simply separate the ranch and buffalo sauces into two squeeze bottles so everyone can adjust their preferred heat level at the table.
