Instructions

  1. Take top sirloin steak out of the fridge 15 minutes prior to cooking for even searing.
  2. Pat steak dry with paper towels to ensure crisp surface crusting.
  3. Rub salt, black pepper, and garlic powder onto all sides of the dry steak.
  4. Whisk sour cream, mayonnaise, prepared horseradish, lemon juice, blue cheese, salt, pepper, and water in a bowl until creamy.
  5. Heat a heavy cast-iron skillet over high heat for 4 minutes until hot.
  6. Swirl olive oil into the hot cast-iron skillet.
  7. Place sirloin steak into the skillet, searing undisturbed for 3 to 4 minutes until a brown crust forms.
  8. Flip steak with tongs, then add unsalted butter and fresh thyme sprigs into the skillet.
  9. Tilt skillet and spoon melted butter continuously over the steak while cooking 3 to 4 minutes more.
  10. Remove steak when thermometer reads 130°F (54°C) for medium-rare.
  11. Rest seared steak on a warm oak cutting board for 5 to 7 minutes to retain juices.
  12. Combine baby greens, halved cherry tomatoes, sliced cucumber, and red onion in a large wooden salad bowl.
  13. Drizzle 3 tablespoons of dressing over greens and toss gently with tongs.
  14. Slice rested sirloin across the grain into 1/4-inch thick ribbons on the oak cutting board.
  15. Divide salad greens among 4 cream stoneware plates.
  16. Fan sliced sirloin over greens, sprinkle blue cheese crumbles, toasted walnuts, and chives, and serve with extra dressing.

Chef's Tips

  1. Dry Steak Thoroughly: Removing surface moisture allows high skillet heat to brown meat immediately, creating a rich crust instead of steaming the beef.
  2. Slice Across the Grain: Slicing rested steak perpendicular to muscle fibers shortens them, guaranteeing a tender bite every time.
  3. Make Dressing Ahead: Creamy horseradish blue cheese dressing can be made up to 5 days in advance and kept in the fridge. Toss greens and slice steak right before serving.
