- 1.5 lbs (24 oz) cod or tilapia fillets, cut into 1-inch wide strips
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper
#### For the Cabbage-Lime Crema & Slaw
- 3 cups thinly shredded red and green cabbage (about 8 oz)
- 1/2 cup sour cream (or plain Greek yogurt)
- 2 tablespoons mayonnaise
- 1 large fresh lime, zested and juiced (about 2 tablespoons juice)
- 1/4 teaspoon kosher salt
- 2 tablespoons chopped fresh cilantro
#### For Assembly & Garnish
- 8 small (6-inch) corn tortillas (or flour tortillas)
- 1 fresh avocado, pitted and sliced
- 1 fresh lime, cut into wedges
- 1/4 cup fresh cilantro leaves
Equipment
- 18x13-inch rimmed sheet pan lined with parchment paper
- Small mixing bowl
- Medium mixing bowl
- Whisk and silicone spatula
- Measuring cups and spoons
- Tongs
- Cutting board and chef's knife
Instructions
- Preheat your oven to 425°F and line a large rimmed sheet pan with parchment paper.
- Pat the cod fillets thoroughly dry with paper towels to remove all surface moisture.
- Slice the dried cod fillets on a warm oak cutting board into uniform 1-inch wide strips.
- In a small bowl, whisk chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper until blended.
- Place the fish strips onto the parchment-lined sheet pan, drizzle with olive oil, and toss gently until lightly coated.
- Season the fish evenly on all sides with the spice mixture until bright red-orange and thoroughly coated.
- Arrange the seasoned fish strips in a single layer across the parchment-lined sheet pan, leaving 1/2 inch of space between pieces so they roast crisp rather than steam.
- Bake at 425°F for 12 to 14 minutes, until the fish flakes easily with a fork and turns opaque white with golden-brown crisp edges.
- While the fish bakes, whisk together sour cream, mayonnaise, fresh lime juice, lime zest, and kosher salt in a medium bowl until silky, smooth, and pourable.
- Stir chopped fresh cilantro into the crema until green flecks are distributed evenly throughout the sauce.
- Transfer half of the lime crema to a small serving dish to reserve for drizzling.
- Add the shredded red and green cabbage to the remaining lime crema in the medium bowl and toss until every cabbage strand is lightly coated and glossy.
- Warm the corn tortillas over a medium-high flame or dry skillet for 30 seconds per side until soft and lightly charred.
- Lay the warm charred tortillas open in a row on a cream stoneware platter.
- Divide the dressed cabbage-lime slaw evenly among the 8 charred tortillas.
- Top each tortilla with 2 to 3 strips of hot, crispy baked fish.
- Drizzle the reserved lime crema over the fish and garnish with avocado slices, fresh cilantro leaves, and fresh lime wedges before serving immediately.

Chef's Tips
- Preventing Soggy Baked Fish: Always pat the fish fillets completely dry with paper towels before oiling and seasoning. High surface moisture causes the fish to steam instead of developing crispy, browned edges in the hot oven.
- Easy Fish & Dairy Substitutions: Cod, tilapia, haddock, or mahi-mahi all work beautifully for these tacos. If you prefer a lighter sauce, substitute plain Greek yogurt for the sour cream and mayonnaise without losing any tangy creaminess.
- Make-Ahead & Storage Strategy: Keep the baked fish, cabbage slaw, and crema stored separately in airtight containers in the refrigerator for up to 2 days. Reheat the fish in a 400°F oven or air fryer for 4 minutes to restore its crisp texture before assembling warm tacos.
