Instructions

  1. Pat the peeled and deveined raw shrimp completely dry with paper towels to ensure a fast, golden skillet sear.
  2. In a medium mixing bowl, toss the dried shrimp with chili powder, ground cumin, smoked paprika, kosher salt, and black pepper until every shrimp is evenly coated in spices.
  3. In a separate small bowl, mash 1/2 avocado with sour cream, 2 tablespoons fresh lime juice, and 1/4 teaspoon kosher salt using a fork until smooth, pale green, and creamy.
  4. Fold the shredded green and purple cabbage and chopped cilantro into the avocado mixture until the slaw is bright, crisp, and evenly dressed.
  5. Heat olive oil and 1 tablespoon unsalted butter in a 12-inch stainless steel skillet over medium-high heat until the butter bubbles and foams.
  6. Add the seasoned shrimp to the hot stainless steel skillet in a single, uncrowded layer.
  7. Sear the shrimp undisturbed for 2 minutes until the underside turns opaque pink and develops a rich caramelized crust.
  8. Flip the shrimp using tongs, add the remaining 1 tablespoon butter and minced garlic to the pan, and cook for 2 minutes until the garlic turns light golden and fragrant and the shrimp curl into plump C-shapes.
  9. Remove the stainless steel skillet from heat immediately and pour 1 tablespoon fresh lime juice into the warm garlic butter pan juices, swirling to coat all the shrimp.
  10. Warm the tortillas in a dry skillet over medium heat for 30 seconds per side until soft, warm, and marked with light golden brown spots.
  11. Lay the 8 warm tortillas open across a clean warm oak cutting board or cream stoneware platter.
  12. Spoon a generous heap of crunchy avocado-lime slaw onto the center of each warm tortilla.
  13. Divide the garlic butter shrimp evenly among the 8 tortillas, resting them atop the colorful slaw bed.
  14. Spoon the extra chili-lime garlic butter pan juices remaining in the stainless steel skillet over the top of each taco.
  15. Garnish the tacos with jalapeno slices, fresh cilantro sprigs, and lime wedges before serving immediately while piping hot.

Chef's Tips

  1. How to Avoid Overcooking Shrimp: Shrimp cook extremely fast! Remove them from heat as soon as they turn opaque pink and form a loose "C" shape. If they curl tightly into an "O" shape, they are overcooked and will become rubbery.
  2. Defrosting & Prep Shortcut: For quick weeknight prep, thaw frozen peeled shrimp in a bowl of cold water for 10 minutes. Dry them thoroughly with paper towels before seasoning so the spices stick and the skillet sears cleanly.
  3. Storage & Reheating: Store leftover shrimp and slaw in separate airtight containers in the fridge for up to 2 days. Reheat the shrimp gently in a skillet over low heat with a pat of butter for 1-2 minutes; serve with fresh cold slaw.
